Lotus Seed Soup
BENEFITS:
This soup is great for the heart, liver, and pancreas. It cools down energy and helps prevent red eyes. It is good to have twice a week in the summer. You can eat other foods you like along with this soup.
It is recommended you eat this soup for breakfast or for a snack during the summertime.
Serves 4
Ingredients:
- 1 cup of lotus seed
- 1/2 of adzuki beans
- 1/2 cup mung beans
- 1/2 cup of goji berries
- 1/2 cup of sorghum (bulgar wheat grain) in Asian stores it is called Kaoliang
- Brown sugar to taste
- A couple fresh basil leaves
Preparation
- Soak lotus seeds, beans and sorghum in water covering them for 4-6 hours.
- Use a colander to drain the seeds, beans and sorghum from the water.
- Use the discarded water to water your garden or plants.
- Put the seeds, beans and sorghum in a pot of water ( 1 ½ gallons or more of water ).
- Turn on high heat and let come to a boil.
- Turn heat to low and add the goji berries.
- Simmer on low heat for 2 hours.
- Add brown sugar to taste.
Float a couple fresh basil leaves on top and enjoy!
