Master Lin’s Winter Stir Fry
BENEFITS: Good for high cholesterol, diabetes, and constipation
Serves 3: (Adding 1/2 chicken breast or 1 cup chopped pork serves 4)
Ingredients:
- 2 cups bamboo shoots
- ½ cup peanuts
- 1 cup black mushrooms ( find at a Chinese grocery store) soak in water for ½ hour before adding
- 1 cup carrots chopped
- 2 cups broccoli- chop into a size that feels comfortable
- 2 tablespoons ginger (chopped)
- 1 tablespoon garlic (chopped)
- 2 tablespoons soy sauce
- 3 green onions chopped
- Salt to taste
- 1 tablespoon coconut or vegetable oil
- 1 teaspoon sesame seed oil
- 1 tablespoon cornstarch
Preparation
- Set your stove on medium-high to high. Heat oil in your pan.
- Add bamboo shoots, peanuts and black mushrooms and stir-fry for 3 minutes
- Add broccoli and carrots and stir-fry for 5 minutes
- Add ½ cup of water to the stir-fry and cover for 2-3 minutes
- Open cover, put cornstarch into the water and stir
- Add soy sauce
- Salt to taste
- Add the green onions last
- Stir up and Enjoy—it is ready to serve!
