Master Lin’s Winter Stir Fry

 

BENEFITS: Good for high cholesterol, diabetes, and constipation

 

Serves 3: (Adding 1/2 chicken breast or 1 cup chopped pork serves 4)

 

Ingredients:

  • 2 cups bamboo shoots
  • ½ cup peanuts
  • 1 cup black mushrooms ( find at a Chinese grocery store) soak in water for ½ hour before adding
  • 1 cup carrots chopped
  • 2 cups broccoli- chop into a size that feels comfortable
  • 2 tablespoons ginger (chopped)
  • 1 tablespoon garlic (chopped)
  • 2 tablespoons soy sauce
  • 3 green onions chopped
  • Salt to taste
  • 1 tablespoon coconut or vegetable oil
  • 1 teaspoon sesame seed oil
  • 1 tablespoon cornstarch

 

Preparation

  1. Set your stove on medium-high to high. Heat oil in your pan.
  2. Add bamboo shoots, peanuts and black mushrooms and stir-fry for 3 minutes
  3. Add broccoli and carrots and stir-fry for 5 minutes
  4. Add ½ cup of water to the stir-fry and cover for 2-3 minutes
  5. Open cover, put cornstarch into the water and stir
  6. Add soy sauce
  7. Salt to taste
  8. Add the green onions last
  9. Stir up and Enjoy—it is ready to serve!
