Soybean Kelp Soup

 

BENEFITS: Good for lungs and breathing in winter. Good for lymph system and swollen legs.

Serves 4

 

Ingredients:

  • 4 cups mushroom or chicken broth (You can always add a little water if you like)
  • 1 cup raw soybeans – soak for two hours before making the soup
  • ½ cup walnuts chopped fine
  • 1 cup dry kelp – soak for ½ hour before making the soup
  • 1 medium- sized tomato chopped into small pieces
  • 1 cup fresh basil leaves
  • 1 tablespoon chopped ginger root (small pieces)
  • Salt to taste

 

Preparation

  1. To cooking pot, add chicken broth or mushroom broth
  2. Put walnuts and soybeans together in pot to cook for 1 hour until soybeans are done.
  3. Add the kelp and tomato
  4. Cook ½ hour on medium low heat
  5. (For ham lovers you can add 1 cup chopped ham –it is good for anemia)
  6. Add 2 tablespoons olive oil
  7. Add fresh basil leaves
  8. Salt to taste
